What is Specialty Coffee?
According to the definition of specialty coffee by the Specialty Coffee Association of Japan (SCAJ), it is green beans that have undergone appropriate cultivation management, harvesting, production processing, sorting and quality control in the country of production, and that contain very few defective beans. Also, the roasted beans must be roasted without deterioration due to proper transportation and storage, and no defective beans can be found mixed in. In addition, it should be properly brewed and the cup should display the wonderful flavor characteristics characteristic of the production area. For more details, please check this.
Supplementary for Defining Specialty Coffee
- Specialty coffee and general coffee are distinguished and classified according to the flavor of the coffee liquid (cup quality) based on the SCAJ cup evaluation standards. The cup evaluation criteria will be revised from time to time as specialty coffee develops and changes.
- We believe that SCAJ’s own strict evaluation standards for raw beans are also necessary, but at the moment, it is a condition that the standards of each producing country are met, and the SCAA standards are used as a reference for defective beans. This will be a subject for future study and will be revised as necessary.
- The research topic is the flavor characteristics of coffee that Japanese people find delicious.
